Crustless Quiche

Whether feeding a large family or wanting an easy grab-n-go breakfast option, try out this delicious crustless quiche recipe! You can make it ahead of time and simply reheat slices as needed. It’s high in protein, packed full of nutrients, and dairy/gluten free. 

Crustless Quiche Recipe 
Ingredients
- 1lb ham or other breakfast meat, diced
- 1/2 onion, diced
- 2 cups mushrooms, sliced
- 6 cups spinach, roughly chopped
- 12 eggs

- 1/4-1/2 cup full fat coconut milk
- Seasonings to taste

Directions
1. Preheat oven to 400 F
2. Saute meat and onions on stovetop if not already cooked
3. Crack eggs into large bowl and whisk together with coconut milk
4. Mix in all the rest of the ingredients
5. Grease oven-safe pan with butter or other cooking oil
6. Pour egg mixture into pan and cook for 30min, or until egg is set in middle and brown on top
