Shrimp Stir-Fry w/ Cauliflower Rice

I’m all about quick, healthy meals that are easy to throw together. Looking to mix it up this week? Try this Shrimp Stir-Fry w/ Cauliflower Rice recipe! 

The best part? Most of the ingredients you can buy frozen, which not only makes prep time easier, but also makes it a great recipe to keep in your freezer for when you need a plan B dinner idea. 

Ingredients

  • 1 lb medium-large raw shrimp peeled and deveined (preferably wild-caught)

  • 1-2 Tbsp avocado oil

  • 3 eggs, whisked

  • Mixed medley bag of frozen veggies (carrots, peas, broccoli, peppers, etc.)

  • Bag of frozen cauliflower rice

  • Sea salt, black pepper, and coconut aminos to taste

Directions 

  1. Add 1 Tbsp of avocado oil to a large skillet and heat over medium-high heat. Add shrimp and cook until opaque (roughly 1-2min per side). Remove shrimp to a plate and set aside.

  2. Add whisked eggs to skillet on medium heat. Chop with spatula and then set aside on the plate with shrimp.

  3. Add frozen veggies to skillet and cook until tender. Add additional avocado oil as needed to prevent sticking.

  4. Add in cauliflower rice to skillet and stir to combine. Cauliflower rice cooks quickly so it will only take 1-2min!

  5. Once cauliflower rice is heated, add shrimp and eggs to skillet and stir to combine.

  6. Add salt, pepper, and coconut aminos to taste.

  7. Enjoy!
