Delicata Squash Recipe

This week I want to share one of my favorite side dish recipes - Delicata squash! To be honest, these ornate squashes don’t look like they’d be edible, but they are absolutely delicious. The best part? You don’t have to peel the outer layer! The skin is both edible and beautiful. This saves so much prep time. The recipe is detailed out below, but all you really need is some avocado or olive oil and you have an amazing French fry alternative. Try it out and let me know what you think!

Ingredients

  • 1 Delicata Squash

  • 1 Tbsp Avocado or olive oil (potentially more or less depending on squash size)

  • Salt and pepper to taste

  • *Optional: onion flakes

Directions

  1. Preheat oven to 425 degrees Fahrenheit.

  2. Cut squash in half length-wise and scoop out seeds.

  3. Slice each half width-wise into (roughly) 1/2inch pieces. It should look like a squiggly, halfmoon shape!

  4. Place squash slices on the pan.

  5. Pour oil and seasonings over pan and mix with hands so all slices are coated.

  6. Bake in oven for 15min.

  7. Take out pan and flip slices.

  8. Bake for another 15min or until both sides are golden brown and/or crispy (depending on taste preference).

This recipe is super simple and makes a great side dish to any meal. Personally, I like to pair them with a burger and side salad. Enjoy!
