Egg Breakfast Sandwich w/ Sweet Potato Slices

Breakfast… My all time favorite meal! If you’re looking to do breakfast right, try this egg breakfast sandwich using sweet potato slices instead of bread. It’s super simple! You can cook the sweet potato ahead of time for ease, and then pop the slices you want in the toaster that morning to re-heat and crisp up. Sweet potato makes for a delicious, nutrient-dense bread replacement!  

Sweet Potato Slices

  1. Preheat oven to 450 degrees Fahrenheit.

  2. Slice a sweet potato horizontally, roughly 1/4-1/2in thick.

  3. Brush with avocado oil, coconut oil, or other cooking oil.

  4. Salt and pepper to taste.

  5. Bake for 15min, flip, and then another 10-15min until desired crispness.

Breakfast Sandwich Assembly

  1. Smash avocado on two sweet potato slices.

  2. Top each with spinach .

  3. Cook two fried eggs and place one on each slice.

  4. Top with nutritional yeast, flax, and sprouts.

  5. Drizzle with olive oil.
